9 lg. potatoes; Peel potatoes, cut up and cook until a fork goes through them; drain off all water and mash until smooth. (Potato masher, or mixer can be used).
Add:
2 cups of light sour cream
6 oz. light cream cheese
3 tsp. Onion Salt (not in your pantry- use 1/2 salt and 1/2 onion powder)
8 Tbsp. of Butter, divided (use 5 Tbs. in potatoes and remaining on top)
Pepper to taste
Paprika sprinkle on top.
Mix all except 3 Tbs. of butter and paprika;
Spread in a 9 x 13 dish sprayed with Pam; put 3 Tbsp. of butter on top and sprinkle with Paprika; (Cover and refrigerate for up to 2 days);
Bake at 400 degrees for 30 minutes or until lightly browned on top; bake uncovered.
This recipe can be cut in 1/2
