Recipe from Lisa Morris
Crust:
1/2 cup butter, melted
1 egg
spice cake mix, minus 1 cup
Combine above ingredients and press mixture into bottom of a 9 x 11 pan sprayed with Pam.
Filling:
2 cans pumpkin
2 eggs
2/3 cup evaporated milk
1-1/2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp clove
1/2 cup brown sugar
1 cup spice cake mix
Combine filling ingredients and pour over crust.
Topping:
1/2 cup sugar
1/4 cup brown sugar
1 tbsp cinnamon
1/3 cup butter, softened
1/2 cup oatmeal
1/3 nuts, chopped
Mix topping ingredients to a crumble and sprinkle on top of filling.
Bake at 350 for 60-70 minutes or until set.
