Baked Pears with Oatmeal Streusel Topping

Adapted from Southern Living Magazine

1/3 cup slivered almonds
6 Bosc pears
2 tbsp honey
2 tbsp lemon juice
1/3 cup crushed pineapple, drained
1/2 cup orange juice
Oatmeal Streusel Topping

Preheat oven to 350.

Place slivered almonds in a shallow pan. Bake 4-5 minutes or until toasted, stirring after 2 minutes.

Increase oven temp to 375.

Peel pears, and cut 1 inch from stem end. Scoop out 2 tbsp pulp from top of each pear, using a small scoop, to form a cup. Cut about 1/4 inch from bottom of pears, forming a flat base. Please pears in an 11x7 baking dish.

Combine honey and lemon juice in a small sauce pan. Hear over medium heat until warm. Stir in toasted almonds and pineapple.

Spoon honey mixture into pears.

Pour orange juice into bottom of baking dish.

Bake uncovered for 15 minutes.

Oatmeal Streusel Topping:
1 cup oats
2 tbsp brown sugar
1 tbsp butter, melted

In a small bowl combine oats, sugar, and butter.

Top each pear with streusel topping.

Bake an addition 15-20 minutes or until topping is lightly toasted.
