1 8oz package penne pasta
2 tbls butter
2 tbls flour
1-1/2 cups milk
1/2 cup half and half
1/2 cup shredded white cheddar cheese
1/4 cup Parmesan cheese
1 cup shredded Gruyere cheese
1 tsp salt
1/4 tsp pepper
pinch of ground nutmeg
Preheat oven to 350.
Cook pasta according to directions.
Meanwhile, melt butter in saucepan over medium heat. Whisk in flour; cook, whisking constantly, 1 minute. Gradually whisk in milk and half and half; cook, whisking constantly 3-5 minutes or until thickened. Stir in cheddar, Parmesan, 1/2 the Gruyere, salt, pepper, and nutmeg until smooth.
Stir together pasta and cheese mixture. Pour into lightly greased baking dish (Can also do individual ramekins) and top with remaining Gruyere.
Bake at 350 for 15 minutes or until golden and bubbly.
