White Wheat Hamburger Buns

Recipe adapted from The King Arthur Flour Baking Companion
1 cup warm water
1 package active yeast
1/4 cup + 1 teaspoon sugar
2 tablespoons butter, softened
1 egg
1 1/2 cups whole wheat flour
1 3/4 cups all purpose flour
1/4 cup sugar
1 teaspoon salt

Combine water, active yeast, and 1 teaspoon of sugar in a measuring cup. Stir to dissolve yeast and sugar. Let sit ten minutes.

Combine remaining ingredients in a food processor. With the food processor running add the yeast mixture. Keep the food processor running until a dough ball forms. Continue running an additional 45 seconds.

Spray a large piece of plastic wrap with Pam. Place the dough ball on one side of the wrap and fold the other side loosely over it.

Let dough rise for 2 hours.

Preheat oven to 375.

Divide dough into 8 pieces. Roll each piece into a ball and flatten it.

Place dough balls on a greased cookie sheet. Place pan on top of oven and let rise an additional 20-30 minutes.

Mix 1 tablespoon All Whites and 1 teaspoon water. Brush on top of rolls.

Bake 15-20 minutes, until golden brown. Cool on cooling rack.
