Creamy Gruyere Grits

From Southern Living Magazine

1 tsp salt
1-1/4 cups uncooked quick cooking grits
8 oz Gruyere Cheese, shredded
1/2 cup half and half
1 tbsp butter
1/4 tsp pepper

Bring 5-1/4 cups water and salt to a boil over medium high heat. Gradually add in grits and bring back to a boil. Reduce heat to medium low and simmer, stirring occasionally, 12 to 15 minutes or until thickened. Stir in remaining ingredients. Continue to heat until cheese is melted.
