12 oz uncooked penne pasta
1-1/2 tbls vegetable oil
1 lb. boneless skinless chicken breasts, cut into 3/4 inch chunks
1/3 cup chopped onion
1 tsp minced garlic
2 cups Alfredo Sauce
1 tbls chipotle chile in adobo sauce, chopped (can find in Mexican food section)
2 tsp chili powder
2 tsp maple syrup
1/2 tsp salt
8 slices bacon, cooked & crumbled
Cook penne according to directions on package, drain.
While penne is cooking, heat oil in large skillet over med-high heat and cook chicken for about 4 minutes or until cooked through. Remove to a plate and reserve.
Reduce heat to medium. Add onion to skillet and cook for 3 minutes, stirring occasionally. Add garlic and cook 30 seconds. Stir in Alfredo sauce, chipotle, chili powder, maple syrup, and salt. Cook over medium high heat until bubbly. Stir in chicken.
Add pasta to sauce and stir. Garnish with bacon and serve.
