Barley with Artichoke Pesto

1 batch artichoke pesto
1 -1/2 cups barley
1 32oz container vegetable stock

Combine barley and stock in a large pot. Simmer on low 1 hour 15 minutes. Stir in pesto. Simmer 5 more minutes.
Serving Size 3/4 cup (1/4 cup dry) = 3 points
