Lime Cake

1-1/2 cups all purpose flour
2 tsp baking powder
3/4 cup egg substitute (3 eggs)
1 cup sugar
2 tablespoons lime zest
1/2 cup lime juice
3 tablespoons butter, melted
1 tsp coconut extract
1 tsp vanilla extract
1/2 cup applesauce

Preheat oven to 350.

Combine lime zest with sugar.

In a large mixing bowl mix the sugar, butter, extracts, applesauce, lime juice, and eggs. Slowly mix in flour and baking powder.

Pour the batter in a loaf pan sprayed with cooking spray.

Bake 50-55 minutes or until a toothpick inserted in the center of the cake comes out clean.

Cool five minutes in pan then turn out of pan.
